There’s a reason why Pampanga is the culinary capital of the Philippines. The entire province is a melting pot of Spanish, Malay, and even Mexican cuisine. When our country was still under Spanish colonial rule, Kapampangan households were often commissioned by the colonial government to host foreign dignitaries—a testament to the sophistication of its cuisine.

With the area having such a rich culinary history, renowned chef and restaurateur, Don Edward Quito, has chosen the perfect spot for his new creation. His restaurant Urban Table Bistro, opened last year in San Fernando, Pampanga.

Our Food

Through his new restaurant, Chef Don seeks to reinvent traditional Filipino dishes—from converting the classic Filipino breakfast tapa into a perfectly grilled T-bone Tapa Steak, to transforming the Pork Binagoongan to a Chocolate Binagoongan Pasta Dish. Try their Ed’s Benedict dish—an all-day breakfast with pandesal, longganisa, malunggay, and over-easy egg with homemade Hollandaise sauce.

Our Traditions

Of particular note is their Slow-Cooked Pork Belly Pot Roast—it’s made to taste like a traditional Kapampangan asado, where black olives and button mushrooms are added to give the dish a unique flavor. To finish, try their malunggay double apple drink—a smoothie blended with fresh tropical fruits, apple, and malunggay leaves.
